Top 10 Cinco de Mayo Menu Ideas

Having lived in California my whole life with a Mexican-American step-dad, I have always celebrated Cinco de Mayo to some degree.  Which it actually commemorates an important battle the Mexican Army won against the French on May 5, 1862, not the Mexican Independence Day, which is September 16.  And in San Diego, it is basically a city wide holiday that most of us observe.  In college it may have involved one too many tequila shots but now it is more about the food (and the margaritas, who I am kidding?).  So I thought I would round up a list of some of my favorite Mexican inspired appetizers, meals and drinks for your Cinco de Mayo fiesta.

1.  My Quick and Easy Guacamole 

An obvious choice when it comes to any party, Mexican inspired or not!  My take is super simple and really highlights the avocado without a lot of other fillers.   Which if you ask my step-dad, it is how it is really done!  Get the recipe here!

2.  Roasted Garlic Salsa

Again, another no-brainer and one that is so easy and so delicious, it might become a staple in your house. It certainly has in mine, as we make it all the time and put it on everything from chips to tacos to salads to eggs.  I love using salsa as a flavor enhancer on everything or in place of salad dressing.  Get the recipe here!

3.  Queso Verde

If we already have the chips out, let's get another dip going, right?  And my Queso Verde is so yummy, it will probably be the first to go.  This is seriously addicting and ridiculously easy to make.  Every time I make it, my friends and family go crazy for it.  Get the recipe here!

4.  Black Bean and Corn Salad (or Salsa or Side-Dish)

This salad or salsa has a lot of Mexican inspired flavors and is such a versatile dish that is super easy to throw together.  You can serve it with chips or as a salad/side-dish to an entree or wrap it in a tortilla for a vegetarian taco option.  It is fresh and healthy and would make a great compliment to any menu or potluck.  Get the recipe here!

5.  Roasted Vegetable and Goat Cheese Enchilada Casserole

Anything enchilada makes me very happy and these are so easy and healthy they actually make me ecstatic.  This would make a great addition to a party if you are feeding a crowd or have some vegetarians on your guest list.  Even the meat eaters will not the miss the meat in this dish.  Get the recipe here!

6.  Crock-Pot Salsa Chicken

7.  Enchilada Stuffed Peppers

This is one of the most popular recipes on my blog and for good reason.  It is easy, healthy and delicious and would make a wonderful main course for any party or dinner.  It takes the classic comfort food flavors of enchiladas and turns them into something much healthier.  Get the recipe here!

8. Chili Rellenos Casserole

Because a brunch party is never a bad idea, here is a wonderful recipe that would work perfectly.  All the yummy flavors of the amazing chili relleno, but none of the work.  This is a super easy dish that literally takes just 5 minutes of prep work.  Get the cheesy and spicy recipe here!

9.  Cheesy Anaheim Peppers Wrapped in Prosciutto

So, this isn't necassrily a Mexican inspired recipe, but they do require the Anaheim pepper, which is used quite a bit in Mexican cuisine.  It is a delicious, slightly spicy yet sweet pepper that tastes amazing stuffed with cream cheese and wrapped prosciutto (what doesn't, though?).  These would be a fantastic addition to any party menu!  Get the recipe here!

10.  All Natural Strawberry Jalapeno Margaritas

It's not a party without margaritas, especially a Cinco de Mayo one.  What I love about this recipe is it really takes the classic drink up a notch and there is no added sugar or sweetener.  Not to mention, this is a stiff drink but could easily be watered down by adding some club soda to it.  If you are not a huge fan of spice, just a couple jalapenos.  The sweet and spicy is a fantastic flavor combo.  Get the recipe here!
