Here's the thing, I am currently doing The 30 Clean, which is clean eating challenge for 30 days. I have sworn off processed foods, dairy, grains, legumes and sugar (just to name a few off limit foods) for the time being. So I came up with this recipe based on their guidelines. But if you are not "eating clean" at the moment, feel free to change it up and use Greek yogurt, milk or peanut butter. Try it out and let me know if you made it from breakfast to lunch without any hunger pains!
This is what you need:
4-5 Big handfuls of fresh spinach (or one bag)
2 Cups of Blackberries, Raspberries or Strawberries (or a combo)
1 Cup of Light Coconut Milk
1/4-1/3 cup of Nut Butter
This is what you do:
Throw it in a blender and let 'er rip! I start with the spinach just so I can smash it all in there as cleanly as possible. If you want a cold smoothie, freeze your banana and put your coconut milk in the fridge overnight.
4-5 big handfuls of Spinach and just smash it down as best you can.
Then dump your 2 cups of berries (the "jelly" part) and the 1/4-1/3 cup of nut butter of your choice.
1 cup Light Coconut milk ( you can use almond milk or regular milk too).

I always scrape the sides down and blend again. Sometimes, if I am feeling extra healthy, I'll add some more spinach at this point and then blend again.
This recipe makes about two 12 oz smoothies. And it's so pretty! Perfect for a busy morning!
